My mom suffered for years before the doctors finally diagnosed her with Celiac’s Disease. Since I am so like my mom in many ways, I often wonder if I will be the next one that is found to have this disease too. So I have been very careful about the types of food that I eat that contain gluten. I have been trying to stay away from many carbs and I have felt really good since I have been restricting them. I was excited to be offered to participate in a review for some new products from Betty Crocker that now offer Gluten Free Baking Products and tell you all about them.

I was sent some cool kitchen tools, like this Baking Tool Set, to facilitate my review and one of them is a wonderful 8″ Square Cake Pan. I found a few of the Betty Crocker Gluten Free mixes at the grocery store so I got the Yellow Cake mix to try out. I live in a small town, so my choices are probably a bit less than what you may find in a bigger store or a bigger town. We made the cake for dessert the other night. I was intrigued with the consistency of the flour that is used in the mix. It is so super fine, I was wondering how it would come out. But I should not have worried.

The cake baked and rose perfectly. It was easy to top with frosting and it did not crumb at all. I was worried about that because it was so fine looking. When I cut into the cake, it stood up well. It reminded me of the texture of cornbread but it tasted good! The cake it self is not overly sweet but the icing I added did add a lot of sweetness so it was a tasty treat!

I have to say I was pretty impressed at the outcome of the cake. I had never had gluten free cake before so I was not sure what to expect. But it certainly was good and I would try these again. What a great alternative to scratch baking when you are in a hurry but have to stay gluten free.
