Bananas are one of my favorite fruits to enjoy and besides eating them plain, I love to cook & bake with them too! Do you enjoy bananas and if so, how do you like to enjoy them? Personally, I love me a good homemade banana cake or banana bread with some cream cheese frosting!
Today I wanted to share a recipe with all of you that I got from my great auntie about 20 years ago. It’s for her homemade banana loaf and you can easily double the ingredients if you want to bake 2 large loaves.
Banana Loaf Recipe
1 cup granulated sugar
1 large egg
1/4 cup vegetable shortening
3 to 4 ripe bananas, mashed
2 1/4 cups all-purpose flour, sifted
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
In a large bowl cream together the granulated sugar with the vegetable shortening, blend in the large egg. Mix in the remaining ingredients, one at a time and beating after each addition.
Lightly grease your loaf pans. Preheat oven to 350 degrees F. Pour batter into loaf pans, filling them 1/2 way full. Place pans into the oven and bake for approximately 30 to 35 minutes. I keep an eye on my pans and check them around 25 minutes because depending how full I made them, will depend on their baking time.
Remove from oven and let cool. Place loaves in an airtight container or wrap them in plastic wrap.

I have used bananas plain, in banana bread, in fruit salads and frozen as an ice cream substitute. In my bread I usually add cinnamon and walnuts, but I have not yet tried it with cream cheese frosting.
I don’t bake, but love bananas. I eat them plain, with peanut butter and in smoothies(frozen)

If only I’d had this recipe for the last month – O threw away so many bananas that had gone soft, and they would have been perfect for this – I could have stocked up for bake sales. Regardless, I’ll give this a shot.
