Do any of you plant a veggie garden? If so, do any of you grow zucchini? We plant zucchini in our summer garden every year and it takes off like wildfire for us! Once I start getting ripe zucchini, I like to whip up a few loaves of homemade zucchini bread.
Nana’s Homemade Zucchini Bread Recipe
3 large eggs
1 cup brown sugar
1 cup granulated sugar
1 cup vegetable oil
2 cups peeled, grated zucchini
3 cups all purpose flour
1 tsp. salt
1 tsp. vanilla extract
1 tsp. ground cinnamon
1 tsp. baking powder
1 tsp. baking soda
In a large mixing bowl, beat together the eggs, brown sugar, granulated sugar, vegetable oil and vanilla extract. In another large mixing bowl, mix together the all purpose flour, salt, ground cinnamon, baking powder and baking soda. Beat the dry ingredients into the wet ingredients until well combined.
Lightly grease two loaf pans with Crisco or oil. Divide the batter and pour into each of the loaf pans. Preheat oven to 350 degrees F and bake for 50 to 60 minutes or until bread is done. Remove from oven and let cool.

I don’t have a garden but I love finding new ways to use vegetables such as in dessert recipes. This looks like a delicious bread and could be used for muffins too.
One of my favorite things about summer is the abundance of zucchini–I can’t wait! Thanks for posting this recipe. I bet the bread is nice and moist from the brown sugar, eggs, and oil.

Looks like agreat recipe. We always buy way too much zucchini at the market in the Summer, and then hav eot throw it away. No I have a back-up plan; may even make it in muffins so I can freeze them.
Looks like a good recipe. I don’t have a garden, but do have friends who usually have plenty of zucchini to share.
