Looking for a quick meal that also falls into the “taste really good” category? Cooking with wine is an easy way to enhance the flavors or your food, taking the ordinary to the extraordinary. Try adding a dry white wine such as VOGA Pinot Grigio to your favorite chicken or pasta dishes.
Voga Weeknight Pasta Recipe
1 box of spaghetti or linguine
6-8 plum tomatoes, seeded and diced
3-4 cloves of garlic, minced
1 Shallot, minced
2-3 tablespoons of EVOO
A handful of fresh parsley, roughly chopped
1 cup of VOGA Pinot Grigio
2 tablespoons of unsalted butter
Salt and pepper to taste
Bring a pot of salted water to a boil. In the meantime, combine garlic and shallot with EVOO in a large skillet. Cook over medium heat until fragrant, approximately 2-3 minutes. Add the diced tomatoes and toss to coat. Add the VOGA Pinot Grigio and cook over medium heat for approximately 5-6 minutes, or until the tomatoes begin to soften. Turn off the heat and add the butter. Wisk together to melt the butter and combine flavors, then add the parsley. As your pasta continues to cook (6-8 minutes for al dente) the wine sauce will begin to thicken slightly. Once the pasta is cooked, strain it and add it directly to the tomato and wine sauce. Season with salt and pepper to taste and Viola!
Serve immediately with a chilled glass of VOGA Pinot Grigio.
