Corned Beef Recipe for the Slow Cooker

My hubby loves corned beef and cabbage, being a big Irish guy and all. I can’t say that I blame him either! I had never really had it very often before marrying him as this was not something my German mom cooked. My friend made a huge pot of it one day and invited us over and from that day on, I was hooked. Now I try and make it 3 or 4 times a year, if not more often. I did switch from the stove top to a slow cooker so that it would get all tender and amazing and yet keep the broth intact. Here is a basic recipe that I use and my family enjoys.

Corned Beef and Cabbage for the Slow Cooker Recipe

2-3 lb corned beef – packaged with spices is okay
4-5 cups of hot water or so meat is covered
1/2 tsp pepper
1 small onion, sliced
2 carrots, sliced
1 head of green cabbage, cored and cut into wedges
8 small white potatoes, quartered
1 tsp pickling spices – optional

*You will need a large size slow cooker for this recipe

In your slow cooker, add your meat and spice packet, water, onion, carrots and pepper. I add additional pickling spices, but this is optional. Cook on high for 4 hours. After 4 hours, reduce heat to low and add your potatoes and cabbage. Cover and cook 3-4 hours until vegetables are fork tender. Serve with crusty soda bread or french style bread.

    Thank you for sharing this recipe Chris. I love Corned Beef and Cabbage but have never had it in the slow cooker. So I’ll be pulling out my big slow cooker and following this recipe. I can only imagine how tender it is. 🙂

    I admit I’ve never had corned beef and cabbage. I was never a fan of the way cooked cabbage smelled so I just never made it. My daughter loves St. Patrick’s Day. Maybe I will use this recipe to make a special holiday dinner that day. I love how convenient using the slow cooker is, and this looks like something we should try. Thanks.

    I LOVE corned beef, hubby not so much- but thats how I make it too is in the slow cooker. I think mine goes for more than 4 hours though- I figure its done when it is fork tender.
    Hmmm I have one in the deep freeze- might pull it out!

    I never made corned beef in a slow cooker and that makes a lot of sense. This looks like a delicious recipe. I would add more onions.

    I just got a slow cooker for Christmas. I have been try to think of things to make besides soups. This will be perfect to make anytime, especially with St. Patrick’s Day coming up soon. I look forward to trying this. I like that the slow cooker will keep the meat tender. That is why i do not make it at home. The meat always seemed to come out so dry. 1 tsp pickling spices? I had not used that before. That might be the trick for the flavor.

    For some reason I never thought of doing corned beef in the crock pot but it makes good sense and your recipe looks very yummy.
