Delicious Curry Shrimp Recipe

How many of you love eating shrimp? I know we do! Matter of fact, shrimp are our favorite type of seafood to enjoy! We love it baked, steamed, deep-fried or in soup. We are not too picky…just as long as it is good!

About 10 years ago my mother-in-law gave me this recipe to make homemade Curry Shrimp and my husband just loves it! I am not sure where she got this recipe but hubby raves and raves about it.

Curry Shrimp Recipe

1/4 cup butter, softened
1/4 cup onions, finely chopped
1 teaspoon ground curry powder
3/4 teaspoon salt
1 teaspoon granulated sugar
1 cup chicken stock (broth)
1 cup milk
1/4 cup dry sherry
2 cups cleaned & cooked shrimp
1/8 teaspoon ground ginger

In a large frying pan or wok, melt the butter over medium heat. Stir in the chopped onions and the ground curry powder. Stir in the all-purpose flour and then add in the salt and granulated sugar. Simmer mixture, stirring constantly for 3 to 4 minutes. Stir in the chicken stock, milk and dry sherry. Simmer over medium heat for an additional 10 minutes. Stir in the cooked shrimp (shells removed) and the ground ginger. Simmer over medium heat for an additional 3 minutes. Remove from heat.

Serve over your favorite rice. (hubby likes his served over cooked white rice).
