Creamy Broccoli Veggie Soup Recipe
I love Broccoli and with the cold weather really hitting us hard, soup in a favorite on my list. Luckily my family loves it too. Inexpensive and delicious with a side salad and a loaf of crusty bread, there is nothing that fills the tummy more that a filling soup.
Here is a easy to make soup that you can whip up in no time.
Creamy Broccoli Veggie Soup Recipe
16 oz. bag of frozen broccoli, thawed
16 oz. bag of frozen succotash or cauliflower, thawed
8 oz. frozen yellow or white corn, thawed
2 quarts chicken stock (chicken broth)
3/4 teaspoon salt
3/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
3 hard boiled eggs (sliced)
In a large stockpot, combine the above ingredients together, in the order they are given in the recipe. You can add to or alter the spice ingredients to suit your own taste. You can also omit the eggs, if you choose. Simmer together for 20 minutes so the flavors come together. Serve and enjoy.
