Last week our local Farmer’s Market had a great sale on bananas at 09. cents a pound so I purchase about 10 lbs. of bananas. I decided to freeze some for later use but I also used some to whip up some homemade banana muffins and I used three of them to make a homemade banana cake.
I didn’t have time to fully make my banana cake from scratch so I used a box of cake mix to speed up the preparation process. You can use a box of yellow or white cake mix to make this recipe.
Homemade Banana Cake Cheater Recipe
1 Box Duncan Hines Yellow Cake Mix
(Vegetable Oil, Water and Eggs ~ As called for on the box)
3 large Ripe Bananas
1/4 teaspoon ground Nutmeg
1/2 teaspoon ground Cinnamon
Follow all of the directions on the box of your cake mix and prepare your cake batter by beating in the vegetable oil, water and eggs. Mash up 3 bananas and beat the mashed bananas into your cake batter using an electric mixer. Stir in the ground nutmeg and ground cinnamon.
Follow the directions on the back of the cake mix box and bake your cake in the oven. I poured my batter into a 9″ by 13″ baking dish and baked mine at 350 degrees for 40 minutes. Remove and let cool.
I frosted my cake with some homemade cream cheese frosting, but you could certainly frost yours with whatever you like. Sometimes when I use this cheater recipe, I will also toss in a handful of semi-sweet chocolate chips into the cake batter which makes it really good too! Enjoy!

I love cheater recipes…they are typically fun and sometimes become favorites. Cake mixes are great and versatile. I’ve used them to make cookies before too. I love banana bread and wonder how this would be with nuts added and baked in a loaf with probably some sweet glaze topping.
I love Cheater/Semi Homemade recipes! I love how versatile cake mixes are and how some extra additions can make something wonderful. I will use this recipe. I bet a Peanut Butter Frosting would taste delicious too!

Yummy! This recipe sounds great. I have never made a banana cake. Do bananas freeze well? I’ll have to try it sometime. Thanks for sharing.
You can freeze bananas but once you thaw them, they are best used in baking recipes and not for snacking. I remove the peel and lay them on a baking sheet. I then freeze them for 2 hours, remove the sheet from the freezer and place the frozen banana halves in zipper closure bags. Then when I need them for a recipe, I can pull 3 or 4 from the bag, thaw for 15 minutes and throw them into my recipes.
