Quick and Easy Egg Bake Recipe

My girlfriend Mary has a huge family so there is always some type of get together that she is hosting at her house. I went to her home for one of the big shindigs and she was serving a brunch and this Egg Bake Recipe was on the menu and it was so delicious, I asked her for the recipe. I have seen similar recipes like this before but I am not sure where this one originated before her but it sure is worth trying in your have a houseful. This is great as a breakfast or a lunch and it serves quite a few folks so it is great for a crowd.
Quick and Easy Egg Bake Recipe
Mary’s Egg Bake Recipe

1 bag Southern Style Frozen Hashbrowns
2 -3 Cups of Country Gravy
8oz. Grated Cheese – Cheddar or Monterey Jack
12 eggs beaten
1 lb ground sausage crumbled and cooked
salt
pepper

Brown and drain your sausage. Mix the potatoes, sausage and gravy together in a 9×13 pan. Layer on the cheese. Pour your beaten eggs over the top and bake for 45-60 minutes at 350. Check with a knife before serving.

Mary used to make this the night before but did not add the eggs, covered it and left it in the refrigerator overnight. In the morning she would add the eggs and bake it. So it was a fast breakfast to prepare. When I make it, I add more gravy on the side along with some biscuits. Delicious!

    I like being able to make most of this in advance and then just adding the eggs. I would probably add some herbs and onions to this recipe.
