I am a huge cheese lover. Being a midwest girl with a German mom, cheese was enjoyed a lot with sausages and just as snacks too. That love of cheese continues today and my son is following in my footsteps as he is a huge cheese lover too. As a mom and the chief cook, I love expanding my horizons and trying artisan cheeses made by smaller private companies. Golden Age Cheese is one of these smaller cheese companies that you are going to want to check out.
Golden Age Cheese is a wholesale and retail cheese manufacturer from New York and they produce many different cheeses for you to enjoy. You can find Swiss, Fresh Mozzarella, Assorted Cheddars, Muenster, Smoked Cheeses and even Cheese Curds. All of their cheeses are 100% natural and made and aged at their facility.
Like many of you, I love Italian foods so when I got to sample one of their awesome gift boxes called the Italian Cheese and Beef Stick Gift Box, I was super excited. With awesome pasta sauces, pizza and so much more that you can use these marvelous cheeses in, my mind was already thinking of all the recipes I could make.
Inside is a package of freshly grated Parmesan, a big chunk of fresh Mozzarella and another chunk Provolone. Also tucked inside is a five pack of their beef sticks. I Could not wait to try it out. So for lunch, I made a quick and easy one with some sliced Provolone and slicked beef sticks. I added a few slices of crusty baguette and it was heavenly.
The cheese is semi soft and wonderfully creamy. The taste is mild and amazing. The beef sticks are delicious! You can tell that this is fresh with a nice snap of the stick and a nice texture of the meat. Add the two together with a bite of crusty bread and it was an amazing lunch! Yumm!
I also gave the mozzarella and the Parmesan a sample before I got cooking with them and I was very impressed with the flavors. The mozzarella is so mild and you can really tell this is a crafted cheese and not manufactured. The Parm is awesome. I love the fresh texture and taste and I couldn’t wait to cook with them.
Since pasta is a favorite in our home, I decided to make one of our most enjoyed ones. It is a take off of a traditional Mostaccioli, which is a baked pasta dish. First I make a thick ragu of meat and marinara with lots of garlic and seasonings. I add in chopped olives for additional flavor. I then boil off some mostaccioli pasta while the sauce is simmering. I grab a baking dish and place some sauce on the bottom of the dish, then layer on pasta, the 3 cheeses, the sauce. Then follow that with pasta, sauce and cheese again. I then bake it for about 35 to 40 minutes or so until the sauce is bubbling and the cheese is melted. So Awesome and easy to make! The flavor of the cheeses work together with the ragu and it tastes great. Maybe I will make my famous lasagna this weekend. Cannot wait!
