Mexican Tuna Salad Recipe

I love tuna salad but I do get bored with the same old recipe. A few months ago my sister gave me this recipe and I have fallen in love with it! We enjoy it during the weekends as a late lunch with some great tasting margaritas on the side! yummy!

Mexican Tuna Salad Recipe

2 (7 ounce) pouches chunk white tuna
4 large fresh tomatoes, chopped
1/2 cup onion, finely chopped
2 cups chopped fresh cilantro
1/2 cup lime juice, freshly squeezed
2 Jalapeno Peppers, seeded and minced
1 tsp. salt
1 head lettuce
24 tortilla chips, baked

Place tuna in medium bowl. Break into large pieces with a fork. Add tomatoes, onion, cilantro, lime juice, peppers and salt; Stir to mix. Cover and refrigerate for 30 minutes or up to 6 hours. Line plates with lettuce leaves and top with tuna salad. Serve with tortilla chips.

    If you want some heat in your tuna salad this is a good idea. Perhaps I’d add some avocado to “guacamolize” it!

    Copied it as it sounded good. I, too, get sick of the same old tuna salad made with mayonaise, pickle relish, celery and apple. Thanks for the good idea.
