Homemade Zucchini Nut Bread Recipe

We are finally harvesting some nice sized zucchini from our garden and this weekend I will be making a few loaves of homemade zucchini bread. I have been using my mother-in-law’s recipe for several years now and today, I thought I would share it with all of you.

Homemade Zucchini Nut Bread Recipe

3 large eggs, beaten
1 cup corn oil
1 cup granulated sugar
1 cup brown sugar
2 cups grated zucchini, peeled
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 1/2 teaspoons ground cinnamon
1/2 cup chopped nuts

In a large mixing bowl, combine together the large eggs, corn oil, granulated sugar, brown sugar, zucchini and vanilla extract. Stir in the remaining ingredients, one at a time and stirring after each addition.

Preheat oven to 350 degrees F. Lightly grease two loaf pans and spoon the bread batter evenly into each prepared loaf pan. Bake in a preheated oven for 40 to 45 minutes or until done.

    Thank you so much for this recipe, I forgot all about zucchini bread. My mother and grandmother used to make this once or twice a year and it was a big deal to us kids. We would always be so excited to have some! It just brings back memories… I think I’ll put this on my recipe list!
