I had a little time earlier today to do some baking and normally, I don’t use boxed mixes. Well, at the grocery store last week they had these Betty Crocker Pumpkin Spice Cookie Mixes on sale for .88 cents and I just couldn’t pass them up!
I decided to make bar cookies with it and I doctored it up just a little bit! Here is what I did:
Betty Crocker Pumpkin Spice Bar Cookies
1 pkg. Betty Crocker Pumpkin Spice Cookie Mix
1/4 teaspoon baking powder
1/2 teaspoon ground cinnamon
1 cup semi-sweet chocolate morsels
I followed the directions on the package for all of my wet ingredients (egg and water) and then mixed in the baking powder and ground cinnamon until my batter was nice and moist. I then stirred in the 1 cup of semi-sweet chocolate morsels. I spread the batter into a 9″ by 9″ square baking dish and baked them in the oven for 22 minutes at 350 degrees. Once they cooled, I cut them into bars.
They are super yummy with the addition of the chocolate morsels (chocolate chips). You can omit the baking powder if you like a less cake-like cookie bar and just follow all of the directions on their package.
My hubby loves pumpkin cookies with chocolate chips but I didn’t have time to stand there taking cookie sheet after cookie sheet out of the oven. So, he got Pumpkin Spice Cookie Bars instead! ha!
