Raspberry and Blackberry Cobbler Recipe
I grow my own raspberries and blackberries and I am patiently waiting until the middle of July when my raspberries and blackberries will be in season and ready for picking. In the meantime, I thought I would share with all of you one of our favorite cobbler recipes so that when your berries are ripe and ready for picking you can try out one of our favorite recipes.
Raspberry and Blackberry Cobbler Recipe
1 cup fresh raspberries
1 cup fresh blackberries
1 cup granulated sugar
1 cup water
1 large egg
1/2 cup butter, softened
1 cup milk
1 cup granulated sugar
2 cups all-purpose flour
2 teaspoons baking powder
Preheat oven to 350 degrees F. In a large bowl combine together the raspberries and the blackberries with 1 cup granulated sugar and water. Set aside.
In a large mixing bowl combine together the large egg, softened butter, 1 cup granulated sugar, all-purpose flour and the baking powder until well blended.
Pour the flour mixture into your baking dish first. Next pour the fruit mixture on top. If desired, you can swirl the fruit mixture through the flour mixture. Place baking dish into the preheated oven and bake for 35 to 40 minutes or until done. You can serve this cobbler warm or cold, the choice is yours! Enjoy!
