Homemade Lemonade Muffins Recipe

1 1/2 cups all-purpose white flour
1/4 cup granulated sugar
3/4 teaspoon baking powder
1/2 teaspoon salt
1 large egg, well beaten
1 (6 ounce) can frozen lemonade concentrate, thawed
1/4 cup milk (we use 2% milk)
1/3 cup vegetable oil

Note: if you like a lot of lemon flavor you can grate up some lemon rind and toss that in too!

In a large mixing bowl, combine together the all-purpose flour, granulated sugar, baking powder and salt. In another large mixing bowl combine together the well-beaten egg with 1/2 cup lemonade concentrate, milk and vegetable oil until well blended. Pour the wet muffin batter into the dry ingredients, stirring to combine all of it together.

Place paper muffin cups in your baking pan or lightly grease the cups. Pour the muffin batter into each cup filling them 3/4 of the way full. Place muffin pan into a preheated 350 degree oven and bake for approximately 15-18 minutes, or until lightly golden brown. Remove pan from oven and brush the tops of each muffin with the left-over thawed lemonade concentrate. Let them cool. Store in an airtight container.
