When summertime is near, I get the craving for my awesome Corn Bean Salsa. I am sure you have seen variations of this recipe all over the place, or maybe you have even enjoyed it yourself. This is a delicious mix of ingredients that is wonderfully fresh. This is a lovely, healthy recipe that you can use as an actual salsa with chips or as a side dish veggie with your BBQ or any meal. My whole family loves this.
Easy Corn Bean Salsa Recipe
Ingredients:
2 cans Petite White Corn aka Shoepeg Corn – rinsed and drained
1 can Small Black Beans – rinsed and drained
1 can Small White Beans – rinsed and drained
2 small Roma tomatoes – chopped with insides removed
3 stalks green onions – sliced finely
1 bunch Cilantro – chopped
Dressing:
1/3 cup oil
1/3 cup lemon juice
2 TSP Salt
2 Tsp Cumin
Directions:
In a large serving bowl add in your drained corn and beans. Add in your tomatoes, onions and the chopped cilantro. The items for your dressing, you can add directly on top of this mixture. No need to dirty a new bowl. Mix together well and serve.
Note:
This recipe tastes best when it is made ahead and allow to sit in the refrigerator for a few hours. 20-30 minutes before serving, pull it out and stir it again allowing the flavors to come together and warm up to room temperature.
