I love gardening and always end up with an abundance of fresh veggies that I need to use up quickly. One of the things I like to do with a slew of different vegetables is toss them together in what I call a veggie casserole bake. Here is one I made just last week.
Cheesy Veggie Bake – Casserole Recipe
1 cup chopped red tomatoes
1/2 cup chopped green peppers
1/2 cup chopped zucchini
1/2 cup chopped yellow squash
1/8 cup finely chopped onions
1/4 cup chopped broccoli
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon Italian Seasoning
1 tablespoon olive oil
1/2 cup of shredded cheese (whatever kind you like)
Toss together all of the above ingredients in a large mixing bowl except for the shredded cheese. Spray the bottom of a glass baking dish lightly with some non-stick veggie spray. Pour the tossed veggies into the baking dish and spread them out evenly. Sprinkle 1/4 cup of the shredded cheese on top.
Place into a preheated 350 degree oven and bake for 20 minutes. Remove from oven and sprinkle on the other 1/4 cup of shredded cheese. Place back into the oven and bake for an additional 5 to 10 minutes or until veggies are fork tender and the cheese has melted. Remove from oven and serve immediately.
