One-Bowl Banana Cake Recipe

For the past week or so I have been in a banana mood and thank goodness that everyone here in my house loves bananas! Today I thought I would share my homemade banana cake recipe with all of you. Once it is baked and cooled you can frost it with your favorite frosting (we like cream cheese or butter cream frosting on ours).

One-Bowl Homemade Banana Cake Recipe

2 cups granulated sugar
1/2 cup shortening
2 large eggs
1 cup mashed ripe bananas
3/4 cup sour milk
1 teaspoon baking soda
2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon vanilla extract

In a large mixing bowl cream together the granulated sugar, shortening and large eggs until well blended. Stir in the mashed bananas and sour milk, beat again. Stir in the baking soda, all-purpose flour, baking powder and vanilla extract. Beat with an electric mixer on medium speed for 2 to 3 minutes or until well combined.

Lightly grease a cake pan or spray lightly with non-stick cooking spray. Pour the cake batter evenly into a 9″ round cake pan. Bake in a preheated 350 degree oven for 30-35 minutes or until done. Remove and let cool completely before frosting.

I mentioned in another post that I don’t like to eat bananas, but, banana cake is a different story. I also LOVE banana nut bread.
