Homemade Banana Cake Cheater Recipe

Homemade Banana Cake Cheater Recipe

I love banana cakes, pies, cookies, muffins and bread….with that said, I don’t always have time to whip something up from scratch. A few weeks ago, my sister shared with me her “cheater recipe” for homemade banana cake that utilizes a box of yellow cake mix.

Homemade Banana Cake – Cheater Recipe

1 box Yellow Cake Mix
1 1/3 cups water
3 large eggs
1/3 cup vegetable oil
1 cup bananas (mashed up)

In a large mixing bowl, combine together the yellow cake mix, water, eggs and vegetable oil with an electric mixer until all ingredients are well combined. Stir in the mashed bananas until they are blended throughout your cake batter.

Preheat oven to 350 degrees F.

Lightly grease two 9″ round cake pans or one 9×13″ baking pan. Pour the cake batter into the pan, use a spatula to spread the cake batter evenly into the pan. Bake in a preheated oven for 25-28 minutes or until done. (using the 9×13″ baking pan requires a few extra minutes of baking time). Once the center of the cake is done, remove from oven and let cool on a wire rack. Frost the cake with your favorite frosting/icing recipe.

    This is such a simple recipe, yet I’m sure it tastes good. It is also a good and tasty way to use very ripe bananas.
