Baked Bananas with Rum and Coconut

Baked Bananas with Rum and Coconut

I love making this recipe during the summertime and everytime we hold a backyard barbecue (like this weekend) and pool parties it seems like I make this recipe. I hope you all like it too and if you have never tried it, I highly recommend it!

Baked Bananas with Rum and Coconut Recipe

8 ripe bananas
1 tablespoon butter
1/4 teaspoon salt
6 oz. flaked coconut
3 tablespoons brown sugar
1 tablespoon lemon juice
1/2 cup water
1/2 cup rum

Peel the bananas and then cut in half lengthwise. Place them in a single layer in a medium sized baking dish and dot with butter. Sprinkle salt on top and then sprinkle the coconut flakes and brown sugar on top of that. Lastly, sprinkle the lemon juice on top.

Place the baking dish in a 325 degree oven and bake for 8 minutes. While they are baking combine together the water and rum. Remove baked bananas from the oven and pour the rum & water over the top. Place the baking dish back into the oven and bake for an addition 5 to 8 minutes. Remove and let cool, serve as a nice treat for the adults!

    I don’t like to eat bananas and I’m not very fond of coconut either (except if I’m having an Almond Joy)
