Quick Dinner Ideas with Ground Beef

Boy, did I make a big oops the other day! I usually buy my meat from Costco in bulk and then break it down into separate packages and freeze it. Well, we were in a hurry when we got home and just threw the meat quickly in the freezer, meaning to come back in a hour and get it packaged. Well, I am sure you know where this is going… LOL Yes we did forget it. UGHH So now I have 6 lbs of ground beef hamburger I need to deal with – frozen. So what am I going to do?
Quick Dinner Ideas with Ground Beef
I needed some quick dinner ideas to make with all of the ground beef. So I defrosted it in my fridge over the next few days and since it was Bunco night coming up, I decided to make chili con carne to take with me. While I was making my chili, I had a second pot on the stove and I just browned all of the beef. I drained it and put it in to a big bowl and then in the fridge for later use.

The next day, I made a warm lunch of Hamburger Helper.. 2 pounds gone! So last night we decided to make Hamburger in a white country gravy with mushrooms that we poured over big biscuits. Delicious! 4 lbs gone. Tonight is the final night. I am going to get this finished! I am making a baked pasta dish with ground beef, tomato sauce, chopped olives, Italian herbs and garlic. I layer it in to a deep baking dish and put mozzarella cheese in between the layers, much like a lasagne except I use penne pasta or something similar. I then bake it for about 30 minutes to bring all of the flavors together and get the cheese melting. Delicious!
