Grandmas Meat Stretcher Recipe
Back in the day when meat was a luxury and folks were feeding a lot of people at one time, stretching meat for a meal was a necessity. This recipe comes from my husbands Grandmother, adapted by me. Theirs was more of a thick soup, mine is more like a one pot casserole.
Grandmas Meat Stretcher
Ingredients:
1.5 to 2 lbs ground hamburger
1/2 small onion, minced or Onion Powder
3 – 15 oz. cans tomato sauce
1.5 cans water
1 lb bag of frozen corn
10-15 slices of American Cheese, real – not cheese food imitation
pinch of sugar
pinch of salt
cracked black pepper
2 tbs garlic powder
1/2 to 3/4 lb Egg Noodles or Elbow Noodles
Instructions:
In a small stock pot or Dutch oven, brown the hamburger and add in the onion to cook at the same time. After it is browned, drain all of the fat and return to the pan. Add in the tomato sauce and the water and incorporate it while bringing it to a rolling boil. Add in the corn and seasonings. Once the mixture is boiling, slowly add in the cheese, one slice at a time stirring to melt and mix into the sauce. Turn down to simmer for about 15 minutes stirring occasionally.
Meanwhile, in a separate pot, cook the noodles of choice until done and then rinse to stop cooking and drain well. Add it into the meat mixture and allow it to cook for a few minutes to blend. Adjust seasonings and serve immediately. Serve with salad and bread if desired. Feeds 6-8 people and tastes great as leftovers too!
