Spring is in full-swing and summer is just around the corner. During the spring and summer months I enjoy eating a lot of freshly made salads. Thankfully my daughter and her husband plant a backyard garden every year and pass along all of their extra fresh veggies to me. Cucumbers always grow well around here and many people end up with a large stash of fresh cucumbers. What a great recipe to use some of them up!

Cucumber Salad with Lemon Poppyseed Dressing Recipe
1 mason jar
1/4 cup extra virgin olive oil
1 tsp sugar of choice
2 tbsp freshly squeezed lemon juice
1 1/2 tsp poppy seeds
A pinch of salt and pepper
1 long English cucumber, slice
Add ingredients (except cucumber) to mason jar with secure lid or blender and shake/blend until ingredients emulsify. Pour over cucumber slices and mix so dressing coats slices evenly. Serve with meal of choice – or enjoy by itself!

This sounds really good, it would be a great refreshing summer salad. My dad always made a cucumber salad with miracle whip/mayo and that’s the way I make it. My daughter loves lemon, so I’ll have to try this one. Thanks for sharing!
I love all these flavors . It should make a delicious salad. It would also be very easy to switch the poppy seeds for an herb which would make another good variation.
I like anything with poppyseed, This dressing sounds so good. Out cukes havent even done a whole lot. This is one to save for later in the summer.
We are already having warm weather so I am in the mood for salads and this one looks really good. I enjoy dressings that have fresh lemon juice in them.
