Soft and Chewy Molasses Cookies RecipeTwice a month I make homemade cookies for my family enjoy and last month I made a batch of soft and chewy Molasses Cookies which were a big hit! If you’ve never tried this flavor of cookies before…I highly recommend them!

Tip: These cookies freeze well! I will often bake a double batch and freeze one of the batches for later use. You can freeze them in freezer bags or containers for up to 3 months.

Soft and Chewy Molasses Cookies Recipe

3/4 cup butter, melted
1 cup granulated sugar
1 medium egg
1/4 cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 cup granulated sugar

Preheat oven to 375 degrees F.

In a medium sized mixing bowl, combine together the melted butter, granulated sugar and medium egg until well-combined. Stir in the molasses until all ingredients are mixed together.

In a separate mixing bowl sift together the all-purpose flour, baking soda, salt, ground cinnamon and ground ginger. Blend the dry mixture in with the wet mixture until all of those ingredients are combined together. Cover your bowl and refrigerate the dough for 2 hours.

Remove bowl from the refrigerator and let stand at room temperature for 5 minutes. Roll the dough into 2″ diameter balls. Place the remaining 1/2 cup of granulated sugar into a small bowl. Roll the dough balls in the granulated sugar and then place the balls onto an ungreased baking sheet.

Bake cookies in a 375 degree oven for 8-10 minutes or until done. Remove and let the cookies cool on a wire rack. Once cool, store them in an airtight container.

    I like the ingredients in these cookies. I would make them more in the fall and for Christmas.

  2. I go on a baking spree every so often and like to have cookies that keep well in the freezer. I have found molasses cookies to be some of the best and this looks like the recipe I use. I have used recipes that did not call for refrigerating the dough and didn’t think they turned out as good. Plus so much easier to roll out.

    Oh how I love molasses cookies! I havent had them for years. My Grandmother made these cookies and I loved the smell of them. Molasses is just plain good, and I always loved how soft they were. With just me and hubby about, I would have to make and take them somewhere!

  4. I’ve never had molasses cookies, so I will have to try them. I love all the spices in them–cinnamon and ginger. They look delicious!
