After receiving my cookbook, I flipped through the pages and liked how it was broken down by Salads, Soups, Sandwiches, Pasta, Rice, Beans, Pizza, and Sides. Everything looked so appetizing and healthy. Normally those two words don’t fit together well, but Everyday Vegetarian has colorful and detailed pictures of the recipes and yum, I wanted to try everything on the pages.

Everyday Vegetarian Cookbook

Everyday Vegetarian is unique in the fact that’s it’s the first cookbook I’ve used that detailed what different vegetables, grains etc. taste like. This is especially helpful when you’ve never heard or tried certain foods. Normally, I’d just flip past a page, if I wasn’t familiar with some of the ingredients and or what to expect them to taste like. Having that information right at hand, opened me up to want to try new spices and foods, that I knew I’d enjoy, now that I knew was to expect and couldn’t believe I hadn’t tried before.

I liked that any of the ingredients from Everyday Vegetarian Cookbook can be purchased at your regular grocery store…one stop shopping is right up my alley, especially trying to fit new healthy choices into an everyday, busy lifestyle.

I made The Black Bean, Hominy, and Kale Stew and it was delicious and comforting. What you’ll need for each recipe is laid out in one column, which is nice and easy to follow. I really like the step by step instructions and pictures of what to expect. This recipe for example, shows what the Chile peppers should look like after each step, which gave me a boost of confidence that I was cooking them correctly and that it was going to turn out yummy.

For this recipe, instead of Kale, you can use any leafy green in this stew. Maybe I don’t like kale or maybe I don’t have that in my fridge, but still want to make this because I have all the other ingredients…it’s refreshing that Everyday Vegetarian gives you options, ideas and choices.

I also made the Grated Carrot Salad on page 331, as a side dish. It was nice to make something different that was sooo good and still healthy! I never thought of putting those simple ingredients together to create a side salad. There are also ideas for you to turn this into more of a meal by adding ham, hard boiled egg, etc. and other spices you can use, so meat lovers can enjoy these recipes, too!

Next, I’m excited to make and try the Squash Ribbon Pasta with Herb Cream Sauce! Then, for my husband, I’m going to make the Curried Peanut Sauce and Ramen Noodle Pizza to bring him back to our college days, but with a healthy twist.

Everyday Vegetarian is a must have for every kitchen! It offers a fun new approach to creating recipes to spice up meal planning with a healthy, fulfilling spin.
