Chiquita Banana No-Bake Cookies Recipe

I’ve been making chocolate oatmeal no-bake cookies for many years and then I stumbled upon the Chiquita Banana No-Bake Cookies Recipe a few years ago. I believe I got it right off of the Chiquita Banana website if I’m not mistaken. It’s a nice twist on the traditional chocolate no-bakes and I think adding in the banana adds a nice unexpected flavor twist.

Tip: Measure out all of your ingredients before getting started. The cookie batter starts firming up quickly, so you’ll want to be able to prepare the recipe as quickly as possible. Next, I found it best to use ripe to very-ripe bananas when I make them. Since I’m allergic to walnuts, I omit them.

Chiquita Banana No-Bake Cookies Recipe

3 ripe Chiquita Bananas
1 cup granulated sugar
1/2 cup butter, softened
1/2 cup milk
3 cups quick cooking oatmeal
2 cups chopped walnuts (I omitted)
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
1/2 cup creamy peanut butter
1/4 cup cocoa powder (optional) I definitely used it and I used Hershey’s

Combine the first four ingredients together in a large sauce pan and bring mixture to a boil. Stir frequently until mixture has a smooth consistency. (I cooked mine for about 5 minutes). Remove from stove and stir in the remaining ingredients.

Divide batter into 24 cookies, place on wax paper and let cool completely, then refrigerate for 1 hour. Store in an air-tight container.

These cookies are a HUGE hit in my house and everyone loves them! It’s always nice to whip up a treat that doesn’t require heating up your oven and spending 3 hours putting cookie shits in/out of the oven. Most days, I don’t have time for that! They are really easy-to-make and don’t take much time at all.

I like easy recipes when I am in a hurry. I would probably add even more cocoa and might try to reduce the butter to 1/3 cup.

    Thanks for a good one.

  3. Baking and I don’t get along well. So I’m glad to have this kind of recipe to still have cookies.

  4. I like no bake recipes like this. I find hey freeze well most usually and are super nice when it is too hot to cook. These would taste great, I love almost anything with banana in it.
