300 Best Taco Recipes by Kelley Cleary Coffeen

When I was a teenager I spent quite some time living in the southwest and was exposed to a LOT of Mexican cuisine. Matter of fact, it’s my preferred cuisine when dining out or preparing something at home. When I prepare it, I like it on the mild side, while hubby prefers his with a little kick.

My Thoughts: As I previously stated, I love Mexican cuisine and one of the things I love the most is a delicious-tasting taco. Every Tuesday night we try to do Taco Tuesday for dinner. Tacos are definitely something that my entire family will eat, including the grandchildren and they’re super easy-to-make.

We decided to make the Beer-Battered Fish Taco Steamers on page 219 in the book and let me tell you…the entire family loved them! You can use whatever “white” fish that you prefer…we used salmon fillets and they were delish! Next week we’re thinking about trying out the Spicy Crab Tacos or the Beefy Adobo Tacos. Both look equally as good!

One of the things I always appreciate with the cookbooks from Robert Rose is the fact that recipes are always easy-to-read and easy-to-prepare. The author’s always sprinkle helpful prep & serving tips along the way. As an added bonus, the foodie photography is top-notch!
