Grilled Vegetable Skewers RecipeApril was National Garlic Month, but just because the month is over, doesn’t mean you have to give it up. Garlic adds an interesting flavor to most dishes that you cook. I enjoy it in a lot of the meals that I make for my family. Now that the summer gardening season is almost here, I’ll be looking for a slew of different recipes to help me use up the fresh veggies that we’ll be harvesting.

Grilled Vegetable Skewers Recipe

1/2 cup Carrington Farms Garlic Flavored Liquid Coconut Cooking Oil
1/2 cup lemon juice
1/2 cup soy sauce
Pinch of salt
1/2 cup of sliced red bell pepper
1/2 cup sliced yellow bell peppers
1/2 sliced red onion
20 cherry tomatoes
1/2 sliced zucchini
1/2 sliced eggplant

Place all vegetables in a large bowl. In a small bowl, mix together Carrington Farms Garlic Flavored Liquid Coconut Oil, soy sauce and lemon juice. Pour over the vegetables. Cover bowl, and marinate in the refrigerator for 30 minutes. Place vegetables on skewers (if using wooden skewers make sure to soak first). Spray grill with Carrington Farms Coconut Oil Spray. Set grill to medium heat. Place vegetable skewers on preheated grill. Cook for 12 to 15 minutes.

    Grilling brings out the flavor in vegetables. This flavored coconut oil should make the vegetables taste even better after being marinated.

  3. My hubby grilled veggies, but he did not use skewers. He grilled the veggies and put them on a platter. The veggies were great.
