Two Chicken Dinner Recipes Your Family Will Love

Viki’s GranolaRegular readers of The Classy Chics will be familiar with Viki’s Granola and some delicious recipes made with it, such as Mixed Berry Crisp Recipe and Cranberry Maple Granola Cookies Recipe. Today it’s my turn to share a recipe using Viki’s Granola!

First let’s talk about Viki’s Granola. The company was founded when Viki’s daughter asked her to make granola for a school bake sale, and it was such a hit that even strangers were contacting Viki to request more. It’s available in five varieties (Original, Blueberry Almond, Maple Cranberry, Banana Walnut, and Apple Cinnamon), and all are gluten, cholesterol, sodium, and dairy free. In addition, Viki’s Granola contains no trans fats and is non-GMO verified and kosher pareve.

For my review and to make the recipe, I received two bags of Viki’s Granola, Original and Maple Cranberry. It took a lot of restraint for me to take some pictures before opening the bags and digging in! I love both flavors straight from the bag as well as stirred into yogurt (my favorite lunch). So good!

Viki's Granola Crusted Chicken Recipe

Viki’s Granola Crusted Chicken Recipe

• 2 eggs, beaten
• 1 cup panko crumbs
• ½ cup Viki’s Original Granola
• ½ cup flour
• 1¼ pounds chicken cutlets
• Safflower, canola, or vegetable oil for frying
• Salt and pepper

Directions:
• Place the eggs in a shallow dish.
• In a food processor, pulse the panko crumbs and granola. Place the mixture in another shallow dish.
• Place the flour in a third shallow dish.
• Season the chicken cutlets with salt and pepper.
• Set the heat to medium and add 1/8″ inch of oil to a large frying skillet.
• While the oil heats, dip the cutlets one by one first into the flour (shake off excess), then into eggs, and finally into the granola-panko mixture.
• When the oil is hot, place the chicken cutlets in the skillet.
• When the bottoms of the cutlets are golden brown, in about 3 minutes, flip the cutlets and brown the other sides.
• Transfer the cutlets to a platter lined with a paper towel.

Because I had chicken tenders in the freezer, I decided to modify the recipe slightly, scaling it down to use what I had on hand. I also chose to bake my crusted chicken tenders rather than frying them. We loved it! The chicken was juicy with a nice crispy exterior and a slightly nutty and sweet flavor from the granola.

Baked Granola Crusted Chicken Tenders Recipe

• 1 egg, beaten
• ½ cup panko crumbs
• ¼ cup Viki’s Original Granola
• ¼ cup flour
• 14 ounces chicken tenders
• Salt and pepper

Directions:
• Place the egg in a shallow dish.
• In a food chopper, pulse the panko crumbs and granola. Place the mixture in another shallow dish.
• Place the flour in a third shallow dish.
• Season the chicken tenders with salt and pepper.
• Dip the tenders one by one first into the flour (shake off excess), then into the egg, and finally into the granola-panko mixture.
• Place the coated tenders on a rack set in a sheet pan.
• Bake at 400°F for 20-25 minutes, depending on the thickness of the chicken pieces.

    I like the idea of using Viki’s Granola to make the chicken tenders more crunchy. I also would prefer to bake them the way you did to omit the fat.

  2. This would be different from our usual chicken dinners. I like the idea of having a crunchy outside. I bet it is very tasty.

  4. Very different. Like everyone else it seems granola wouldnt have come to mind as a potential coating! I would think it would give the chicken a sweeter or nuttier flavor which would be good. I bet too this would work well on pork cutlets.

    I’ve tried Vicki’s Granola & it is really good. I never thought of using it like this, though. I bet it would taste great!
