Chorizo Scrambled Egg Taco Breakfast RecipeBreakfast is (in my opinion) the most important meal of the day. By having a proper breakfast, you’re setting yourself up for the rest of the day. I’ve always found that my day goes much smoother and I feel much better when I’ve enjoyed a hot breakfast early in the morning.

Chorizo Scrambled Egg Taco Breakfast Recipe

6 eggs
1 tablespoon olive oil
2 chorizo links (about 7 ounces)
1 medium onion
1 cup cilantro, divided
1 medium tomato
1 cup sour cream
1 tablespoon fresh lime juice
1 teaspoon salt
1 cup sharp cheddar
10-12 corn flour tortillas
Chipotle Tabasco (suggestion for topping)

1. Mix sour cream, lime juice, and salt in a bowl and put aside.

2. Char tortillas over gas flame or directly on electric burner until blackened in spots, turning with tongs. Place in IMUSA tortilla warmer or aluminum foil and set aside.

3. In an IMUSA non-stick sauté pan add olive oil and bring to medium-high heat. Sweat onions for about one minute and add diced chorizo

4. Cook for 5-6 minutes until chorizo is browned.

5. Add half of the cilantro and all of the cooked chorizo to beaten eggs and mix. Bring eggs back to the IMUSA pan and cook on low heat, mixing from time to time.

6. Place cooked eggs, cheddar cheese, diced tomatoes and remaining cilantro in separate bowls and lay them out throughout the table with the warm tortillas.

7. Allow your guests to assemble their own breakfast tacos

    This sounds like a delicious breakfast or brunch. I have never tried chorizo with eggs and I would love to assemble my own tacos.

  3. I t looks delicious. I have never tried chorizo in eggs. I have used it in chili though when using venison and it is good. I would have to pass on the cilantro, I am one of those people that it tastes like soap. Even the smallest amount throws the taste off. I bet though it can bee left out easily and be great.

    I just love Mexican Styled foods. Your Chorizo-scrambled-egg-taco-breakfast Recipe looks and sounds so yummy! I would love to try this Taco Breakfast. The only thing is I would like to substitute the Chorizo with Sausage links I don’t really like Chorizo. Thank You for sharing your delicious Breakfast taco.

  7. I’m more of a brunch person but love eggs then. Cilantro is one of my favorites too and any kind of hot sauce is a great topping. I pinned their Granny Smith Guacamole Recipe also. It looks yummy.
