The Enchilada Queen Cookbook by Sylvia Casares

The Enchilada Queen Cookbook by Sylvia CasaresHow many of you love Mexican cuisine? I grew up eating a lot of Mexican food, since I spent a lot of my childhood living in Arizona. I’ve always enjoyed enchiladas, fajitas, tamales, quesadillas and just about anything else with Spanish flavor.

If you love Mexican and/or Tex-Mex cuisine, you’ll love the cookbook that I’m featuring today.

Title: The Enchilada Queen Cookbook
Author: Sylvia Casares with Dotty Griffith
Publisher: St. Martin’s Press
ISBN-13: 9781250082916

Texas’ hugely popular restaurant, Sylvia’s Enchilada Kitchen, was selected as one of the Top 10 Great Mexican Restaurants in the USA by USA Today, and founder & chef Sylvia Casares has been called “The Queen of Tex-Mex Cuisine.”

In this brand new cookbook, Sylvia shares 80 recipes for enchiladas, fajitas and classic side dishes based on the ones the madres & abuelas have passed down from one generation to the next in the border towns along the Rio Grande.

The Enchilada Queen Cookbook by Sylvia Casares

Readers will learn how to make her Holy Trinity spice paste, as well as why you should use simple, flavor-changing shortcuts such as chicken bouillon, in some dishes. Sylvia also demonstrates her tortilla-changing Texas Two-Step marinating technique, to flavor & soften corn tortillas.

With recipes for 14 key sauces, home cooks can make unbelievably delicious Tex-Mex dishes for either a family or a crowd, including:

Slow-Fried Pork Enchiladas with Salsa Hidalgo Roja
Squash & Corn Enchiladas with Salsa Espanola
Ceviche a la Veracruz
Pork or Chicken Tamales
Roasted Poblanos in Crema
Enchilada Queen Chocolate Tres Leches Cake
+ More!!!

One of the things I love about this cookbook is that it includes recipes for appetizers, sides, breakfasts, dinner, lunch, desserts and everything in between. These are authentic recipes, not the “faux” stuff you often see in various restaurants, especially the ones on the east coast! Sorry, I now live on the east coast and the Mexican restaurants here aren’t as good as the ones out west. Just being honest. Sigh.

I think this cookbook is fabulous and I’m so glad that I have it in my cookbook collection. Hubby and I are going to try out a new recipe every 2 weeks until we get through this book…almost all of them appeal to us & our taste buds! We’re giving the cookbook 9 mixing spoons out of 10 mixing spoons on our rating scale.
