Three Bean Salad with Mint RecipeI admit, I love eating vegetables especially beans. There isn’t a bean that I don’t like and frankly, I could eat them every day if I had to. While burgers and hot dogs are staples at any backyard barbeque, a healthy, delicious side dish is a must for any backyard barbecue. Greek olive oil brand Gaea has taken bean salad to a whole new level, with a fresh twist that will make for a flavorful, exquisite side. This recipe will make 4-6 servings. It would definitely be a hit at our next family picnic!

Three Bean Salad with Mint Recipe

1 small red onion
1 8-ounce package fresh frozen green beans, thawed
1 15-ounce can garbanzo beans, drained
1 15-ounce can kidney beans, drained
2 tablespoons finely chopped fresh mint
2 teaspoons finely grated lemon zest
1/4 cup sherry vinegar
1/4 cup of Gaea’s Kalamata D.O.P. Greek Extra Virgin Olive Oil
1 tablespoon sugar
1 teaspoon kosher salt
1/4 teaspoon freshly ground pepper

Peel and quarter the red onion and slice it very thinly. Place the onion slices in a large bowl, and add all other ingredients. Stir and taste to see if you’d like more lemon zest or mint. Serve immediately or refrigerate until ready to serve.

  8. This looks extra good to me. I like the combination of beans with the Kalamata’s and even better this would be a good way for me to use the mint that is growing in my garden.
