Lemon Muffins and Peach Lemon Iced Tea Recipes #FoodieFriday

Limoneira Fresh Lemons in Gift BoxWe are now into the dog days of summer and even though we’re approaching the end of August, things are still hot & steamy around here. During the hot summertime months, I love to cool off with some homemade lemonade or iced tea. To go along with my icy-cold beverages, I enjoy a great tasting muffin smothered in some honey butter. Ahhh, just writing this post is making me hungry!

Matter of fact, the company sent me another box of their delicious fresh lemons and today, I’m featuring a few recipes that I made using them. YUMMY!

Homemade Lemon Muffins Recipe

Homemade Lemon Muffins Recipe

2 cups all-purpose flour
1/2 cup granulated sugar
3 teaspoons baking powder
1 tablespoon grated lemon zest
1/2 teaspoon salt
3/4 cup milk
1/3 cup vegetable oil
2 tsp. fresh lemon juice
1 large egg
*optional – melted honey butter

Preheat the oven to 375 degrees F. Use paper muffin liners or lightly grease the cups of a muffin pan, set aside.

In a large mixing bowl, combine together the all-purpose flower, granulated sugar, baking powder, grated lemon zest and salt until well blended.

In a medium mixing bowl, combine together the milk, vegetable oil, fresh lemon juice and large egg. Pour this mixture into the large mixing bowl with the dry ingredients, stirring until all ingredients are combined. Your batter will be a little lumpy but it should be completely moist.

Use a large spoon and fill the muffin cups 2/3 of the way full. Place into a preheated oven and bake for 20 to 25 minutes or until done. Remove and let cool or serve them warm with some melted honey butter on the top.

Peach Lemon Iced Tea Recipe

Peach Lemon Iced Tea Recipe

1 cup granulated sugar
2 fresh peaches
1 cup of water
4 tea bags made specifically for making iced tea
7 cups of water
2 to 4 tsp. fresh lemon juice
Lemon Wedges for Garnishing

Slice up the two peaches to remove the pit but leave the skins on your slices. Place 1 cup of water and granulated sugar into the saucepan and bring it to a boil over medium heat. Place the peach slices into the boiling water, reduce heat to low-medium and simmer for 12-15 minutes. Use the spoon to crush down the peaches to stir the mixture often. Turn off heat and let it sit.

In a large pot bring 7 cups of water to a boil. Toss in your 4 tea bags (I sometimes use 5, depending on how strong I want it). Reduce heat to low and simmer (brew) for 3-5 minutes. Turn off heat.

Use a mesh bag to drain out your chunky peach pieces and the skins; toss away. You now have peach syrup remaining. Pour your syrup into a large beverage pitcher along with the brewed tea that you made. Squeeze in 2 to 4 teaspoons of lemon juice and stir again. Cover the pitcher and chill for at least 3 hours before serving.

I like to serve it in chilled glasses that are garnished with fresh lemon slices or wedges and with plenty of ice cubes! Sweet and Refreshing!

Note: I like my iced tea with a strong peach flavor to it. If you prefer less of the fruit flavoring, only pour in 1/2 to 3/4 of the peach syrup that you made.

  2. I’m not sure why I’ve never had lemon muffins since I love lemon so. I use lemon extract in tons of things since I’m not good at keeping stocked with fresh lemons. The lemon and peach combo sounds great and I know I have a Sparkling ICE peach drink in the cupboard so must mix that up. I’m doing a lot more smoothies lately so that sounds good too.

I was looking for the ingredients for the lemon Butter but I couldn’t find the recipe any where? So I am assuming its lemon juice and butter mixed~ If you would, could you please let me know!
