Ice Cream Cake in a Mug Recipe

How many of you love a good bowl of ice cream? What about a delicious-tasting slice of cake? Okay, let’s take it one step further, how many of you enjoy eating ice cream cake? I’m sure many of you answered YES to all three of those questions.

Ice Cream Cake in a Mug Recipe

4 tbsp. Magnolia premium ice cream (must be premium ice cream)
2 tbsp. cake flour (not all-purpose)
1/8 tsp. baking powder

Melt ice cream in a large microwave-safe mug for about 20 seconds.
Add cake flour and baking powder. Mix with a small whisk until batter is smooth.

Cook in microwave for approximately 1 minute. If cake is not done, heat an additional 15 seconds. Watch for cake to rise above the top of the mug, then remove.

Cake will settle when removed from the microwave. It is best consumed while still warm or within a few hours of it being cooked. Add optional toppings like powdered sugar, whipped topping, fresh berries, hot fudge, or sprinkles if you wish.

    I love how few ingredients are in this recipe. It is so easy to make and should taste delicious.

All of the mug cake recipes I’ve seen seem like a lot of work and ingredients for one serving–if I’m going to get out and measure butter, flour, chocolate, eggs, baking powder, salt, sugar, and vanilla, I might as well make a real cake! But this one is totally doable, with just a few ingredients and a few minutes, and I’ve got a nice snack. Love it! Thanks.

    I Just pinned this Cake in a Mug Recipe!! It looks so Delicious!! Thank you so much for sharing your recipe! I have one question the picture looks like a scoop or 2 of ice cream is on top of the cake..But there is no mention of that anywhere in recipe! Is that Ice cream on top or is that actually how the cake looks when its done? Thankyou for a response.. 🙂

    • She said you can add scoops of ice cream to the top, as well as other sundae toppings…whatever you like.
