Almond Cake with Orange Zest RecipeI love baking cakes, especially easy-to-make cakes like this one. A lot of people think baking a good homemade dessert cake is a long and difficult process when it really isn’t. There is nothing wrong with serving them plain, with a little dusting of sweetness or with a store bought frosting on top.

Almond Cake with Olive Oil and Orange Zest Recipe

3/4 cup Gaea Organic Extra Virgin Olive Oil
1 1/4 cups powdered sugar
3 eggs
1 1/2 cups all purpose flour
1 tsp. baking powder
7 ounces finely ground almonds
Zest of Orange

Preheat oven to 180C/356F. Beat oil, sugar and eggs in a bowl with a wire whisk until light. Combine flour with baking powder, ground almonds and orange zest. Add to oil and sugar mixture stirring in gently. Spread mixture in a greased rectangular pan 22 x11 cm 8.65 x 4.35 inches and bake for 50 minutes. Lower heat to 170C/338F and continue baking for 10 more minutes. Test cake in the center for dryness. If still moist, allow to bake a little longer. Cool cake, remove from pan and dust with powdered sugar.

    I like that this is so simple. I actually prefer cakes like this that just have powdered sugar on top. Something like this I think has even a better taste the day after baking (if everyone doesnt know you made it ha!) I would like this with a nice cup of coffee enjoying the end of the day!

    i admit I am baker from boxes or bags…………. but you know this recipe looks so easy that I think I can do it. Have never had a cake made with olive oil.

    This does sound really good. I love almonds. In fact, I have a jar of almond butter on the kitchen counter that might be used in a great glaze for this cake, lol.

  8. I’m more of a cookie than a cake or pie person myself but it’s good to have some recipes for company. I’d like to try a cake using olive oil since I always have some around. I’ve also wanted to try subbing almond flour in a few recipes, but haven’t yet. I do love the taste of almond anything and think my mom is the same.

    I have been wanting to try baking a cake with olive oil. I love almonds, especially ground in cookies or cakes. I might add a little almond extract to reinforce the flavor.
