Superbowl Party: Baby Back Ribs and Chicken Fingers Recipes

Are you getting ready for the big game? It’s hard to believe but the Superbowl is just a few days away! This year we’ll be entertaining about 14 guests at our home during the game and I’m preparing a tasty feast for them. Typically we like to serve homemade pizza, chicken wings, ribs and several different kinds of appetizers and sides.

Today we’re sharing 2 great recipes with all of you that would be perfect to make and serve at your Superbowl football parties! All of them are easy-to-prepare and are delicious!!!

Colman's Baby Back Ribs Recipe

The first recipe is courtesy of Colman’s mustard and it makes 4 servings.

Colman’s Recipe: Baby Back Ribs Recipe

3-4 pounds baby back ribs

Dry rub ingredients

1 tbsp. kosher salt
1 tbsp. ground chili
1 tbsp. paprika (sweet, hot or smoked)
1/2 tsp. freshly ground black pepper
2 tsp. Colman’s Dry Mustard Powder
1 tbsp. brown sugar
1 tsp. ground cumin
1 tsp. onion powder

Barbecue sauce ingredients

3/4 cup ketchup
2 tbsp. brown sugar
1 tbsp. apple cider vinegar
2 tsp. Worcestershire sauce
1 tsp. Colman’s Prepared Mustard

Pre-heat oven to 250 degrees. Pat the ribs dry with paper towels then using a knife, remove the thin membrane attached to the underside of the ribs. Cut the rack (or racks) of ribs into two pieces of roughly the same size. Combine all the seasonings to make the dry rub and season all sides of the ribs with it.

Place the ribs on a sheet of tin foil, then fold and wrap the foil to create a sealed packet. Place on a baking sheet on the center rack in the oven. Bake for approximately 2 1/2 – 3 hours or until fork tender.

Meanwhile in a mixing bowl whisk together the ketchup, brown sugar, apple cider vinegar, Worcestershire sauce and Colman’s Prepared Mustard to make the sauce. Raise the oven temperature to 375 degrees, remove the ribs from oven and drain any grease from packet. Place the ribs on a foil lined rimmed baking sheet meaty side up, slather with the sauce and return to the oven and bake un-covered for an additional 30 minutes or until sticky and glazed.

Easy Chicken Fingers Recipe

The next recipe is courtesy of Carrington Farms and it makes 4 servings.

Carrington Farms Chicken Fingers Recipe

4 boneless skinless chicken breasts, sliced length wise into chicken fingers
2-3 egg whites, beaten
3/4 cup parmesan cheese
1/4 cup Breadcrumbs
1/4 teaspoon salt
Pinch of pepper
Approximately ¼ cup Carrington Farms Coconut Oil

Pour 1-2 inches of coconut oil into skillet. Heat skillet to 350 degrees. Pat chicken dry with paper towel. Mix parmesan cheese, bread crumbs, salt & pepper together in a medium bowl. Dip chicken fingers into beaten egg whites. Then place them in the bread crumb mixture. Make sure to coat the chicken fingers well.

When the oil is heated to 350 degrees, add one chicken finger to oil to test. The chicken finger should fry for 4-6 minutes to completely cook. Adjust heat if needed and continue to fry the rest of the chicken fingers 3 to 4 at a time. Turn chicken fingers half way through cooking.

Place fried chicken fingers on a paper towel lined plate after frying. Keep warm in 200 degree oven until ready to serve.

  5. I like both! We arent hosting this year, bit when we do, riibs are always on the menu. We cook them, let them rest then grill them along with wings burgers and hot dogs. I hear today that after Thanksgiving Super Bowl is the 2nd biggest shopping day for groceries!

    I love both recipes. I have never tried to fry in coconut oil and I like the idea of having more cheese than bread crumbs in the coating.
