Family Weekend Breakfasts with all natural al fresco + Recipe

al fresco chicken baconBack in January my husband and I made the commitment to get onto a more healthy diet. Like most people, we love to eat but not everything we were eating was good for our bodies. In addition, we love meat but wanted to incorporate healthier chicken products into our diet and cut down on the red meats.

As part of our commitment to eat healthier, we also wanted to make weekend breakfast time with our family special. In the past, we would all just eat breakfast whenever we got up but now we’ve changed that. We all have breakfast together and it’s made for great family bonding time.

Recently we were introduced to the al fresco, all natural line of chicken products. We had never tried this line of foodie products before and were pleasantly surprised to find that al fresco carries all natural chicken sausage, chicken meatballs, chicken burgers, uncured chicken bacon and more!

I received several complimentary al fresco products to review for you and I’ll be sharing them with you over the next few weeks with how we enjoyed them and recipes that we used the products in. Today I’m going to talk to you about the all natural al fresco uncured chicken bacon in the original flavor. It’s a fully cooked, sliced and uncured bacon made from chicken thighs. It contains no artificial ingredients, gluten-free and contains 70% less fat than pork bacon and 40% less sodium. It comes in a 14 count package with 2 easy-to-open pouches. You can make the chicken bacon by using your microwave oven or on the stove-top.

A few weeks ago we went through a snow blizzard here on the east coast. We got 35″ of snow and were without power for 3 1/2 days. When we got up that Saturday morning we decided that it was the perfect time to make some homemade breakfast burritos using the all natural al fresco uncured chicken bacon. Here is how we made them.

Egg Cheese Breakfast Burrito

Egg, Cheese and Chicken Bacon Breakfast Burritos Recipe

4 large eggs
2 flour tortillas
1 tablespoon milk
7 slices all natural al fresco uncured chicken bacon
1/8 cup shredded cheese (we used cheddar)

Using a wire whisk…whip together the large eggs and milk. Spray your skillet with nonstick baking spray and make up a batch of scrambled eggs. When they are almost done, sprinkle on the 1/8 cup of shredded cheese and simmer over low heat for about 30 seconds. Remove from heat.

Cheesy Egg Breakfast Burrito Recipe

In the microwave heat up the al fresco uncured chicken bacon according to package directions. This will take approximately 30-50 seconds. Remove. Toss a flour tortilla on a microwave safe plate and heat on high for 12-15 seconds in the microwave, just enough to warm up the tortilla.

Layer the cheesy scrambled eggs and the al fresco uncured chicken bacon on top of the warm flour tortilla. Roll it up and serve immediately.

Variations: Hubby adds finely chopped onion, green bell pepper, salt and ground black pepper to his egg mixture before frying them. In addition, when he’s assembling his breakfast burrito he also adds 2 tablespoons of salsa or guacamole to his burrito before rolling it up. My mom likes to slice some fresh avocado’s up and adds them to her burrito. I tend to keep mine simple!

I have to admit…now that I’ve tried the all natural al fresco uncured chicken bacon, I much prefer it over traditional pork bacon. It has a wonderful taste to it and I love that it wasn’t as fatty or as salty as pork bacon. It’s very flavorful and I love the crispy texture. YUMMY good and definitely on my next shopping list!
