Grandma’s Harvard Beets Recipe

Red beets are one of the healthier veggies that you can eat. On top of being healthy, they are easy to prepare and are gentle on your GI tract. I love to cook up some red beets and serve them as a vegetable side dish during dinner. When I make Harvard Beets this is the recipe that I like to use.

Quick and easy to prepare.
Ingredients
  • 1 can sliced red beets
  • 1/3 cup white vinegar
  • 1/2 cup granulated sugar
  • 1 tbsp. cornstarch
  • 1/8 tsp. salt
Instructions
  1. In a large saucepan combine the beet juice, white vinegar, granulated sugar, cornstarch and salt together. Simmer over low-medium heat for 5 minutes. Stir in the red beets and simmer for an additional 2-3 minutes. Remove from heat and serve immediately.

 You can adjust the sugar content to how sweet you would like them to be. My daughter likes them very sweet but I like them less-sweet. You can easily double & triple this recipe for larger sized families.

    We like beets, but for some reason I don’t cook them that much. I may try this recipe, but use some red wine and lemon juice instead of the vinegar.

  2. My pantry always has a couple of cans of beets tucked away. I usually just heat them up, but next time, I’ll definitely try doctoring them up with this recipe. Thanks! It will be a nice change.

    I really like beets although have nevr made these myself although I think I have tried them. I have beets in the garden and those are my very favorite just plain.

    I have never made Harvard Beets from scratch – always had them from a can. I imagine these are so much more tasty!!

  8. This recipe takes me back as it was my go to beet recipe in menu planning class. We always had to balance our menus and this was easy to prepare, colorful, and most everyone could eat them too. Still love beets to this day
