While I enjoy cooking, baking is my real passion in the kitchen. Every week I am in the kitchen baking up a variety of tasty treats for my family, including bread. A few weeks ago I baked up a loaf of homemade blueberry bread as I had some frozen blueberries that I needed to use up. This recipe will make 2 loaves and tastes great served warm with a little melted honey butter on the top. Delicious!
- 3 cups all purpose flour
- 1 1/3 cups granulated sugar
- 4 tsp. baking powder
- 1 tsp. salt
- 1 1/3 cups quick oats (oatmeal)
- 2/3 cup vegetable oil
- 4 large eggs, lightly beaten
- 4 cups blueberries
- nonstick cooking spray
- Preheat oven to 350 degrees F. In a large mixing bowl sift together the flour, sugar, baking powder, salt and quick oats. Mix in the vegetable oil, lightly beaten eggs and blueberries, stirring after each addition and mixing well.
- Pour batter into 2 prepared loaf pans. Bake in a preheated oven for 40 to 50 minutes or until bread is done. Remove from oven and let cool.

I love blueberry bread and I shall make this version with the oats in it soon.
Just this morning I was thinking I should bake something to use the blueberries I have in my freezer before I start picking the fresh ones ripening now! This recipe looks perfect. I’ve pinned it so I won’t lose it, and I’ll probably make it this weekend. (I’d make it today but I just made a batch of muffins yesterday and want to use them up first.) Thank you!
