Fresh and Easy Cucumber Salad Recipe

I love summer and all of the fresh veggies that we can handle. I love cucumbers and have wonderful memories of a cucumber salad that a friend of my mothers used to make when I was a child. It was amazing. My mom also made a cucumber salad that I grew up eating and still enjoy today. I want to share that recipe with you. It is fast and easy to prepare and bring a fresh, light twist to your dinner salad or side veggie.

Fresh and Easy Cucumber Salad Recipe

Ingredients:
2-3 good size cucumbers – peeled and halved length wise
2 heaping tbsp Sour Cream
1/2 tsp Salt
1 tbsp Dill

Directions:
Once your cucumbers are peeled and halved, use a spoon and scrape out the seeds. Cut each half length wise again so each cucumber is now in 4 long pieces. Cut into small chunks and place in a medium bowl. Sprinkle the cucumbers with salt and mix around so the are coated. (They should be salty but not overly coated. Adjust the amount of salt for the amount of cucumbers you are making). Let the cucumbers sit for 10-15 minutes to leach out excess water.

Once the cucumbers have sat for a bit, drain off the water but do not rinse the salt off! Return the cucs to the bowl. Place your sour cream in the bowl along with the dill. I like a lot of dill, you can adjust it to your tastes. Stir and serve immediately.

*note* This salad has to be finished right before serving as it will break down from the salt. You can prepare the cucs ahead but make sure to drain off excess water before mixing in the sour cream and dill.

I love this combination of cucumbers, sour cream and dill. Sometimes I don;t have the patience to wait and drain it, but it is definitely much better that way.

  2. Oh yum! I’m loving cucumbers this summer so I’m really loving this right now!

Thank you, thank you, thank you. I can’t believe you found this long lost (to me) VERY simple sounding ~ but classic salad.

My Dad (who passed away suddenly when I was in my early 20’s) used to cook for us a lot and one of his specialties was based on THIS RECIPE. In fact it probably was this “recipe” flavor-wise. He would always start with the cukes, sour cream and dill (fresh or dried) and then he would add whatever vegetables we had around and it was colorful and delicious and he called it “Farmers’ Chop Suey”! Everyone loved it!

  7. Thanks for this recipe. I have one in storage so have been looking for this one. I love cucumbers in this sauce.

P.S. He said he learned it (“got the recipe”) from the owner of a Greek diner he worked for during high school and college.

  8. I love cucumbers, and often make a version of this salad with yogurt and mint. I’ve never tried the sour cream and dill combination, though, but I assure I’ll be making it soon! Thanks so much.

Fairly simple salad and we have tons of cucumbers this year!

  11. I eat a lot of cucs since they are so inexpensive here. I can get 5 or 6 for a buck sometimes and munch on them all week. Super easy recipe and sounds refreshing with the dill added.

  16. I make something very similar but I add some minced fresh garlic (and lots of dill). This is more like a Greek salad that way.

Thank you for sharing. I make a similar salad, but I also add a good helping of pepper and if I have tomatoes I like adding those also. Shredded radishes can be pretty tasty too.

The perfect recipe for the cool suppers we try to eat this time of year! And when the cucumbers are in, there are so many of them with a short shelf life!!
