Chicken Parmesan is such a classic Italian style recipe. It is a wonderful main dish that can be served with anything. Spaghetti and tomato sauce is traditional, but anything goes in my house. I was looking for low cal alternatives for some recipes so I thought I would give this a try Baked instead of fried so I whipped up this easy recipe. Tasted just as good to me! I hope you enjoy it too.
- 2 Full Chicken Breasts – halved and pounded out
- Egg wash
- Italian Bread Crumbs – Seasoned
- Panko Bread Crumbs
- Salt
- Pepper
- Garlic Powder
- Cayenne Powder
- Clean the chicken breasts and halve the breast, if it is not already done. Pound it out to a thinner consistency
- Prepare a baking sheet with a small rack on top – sprayed with cooking spray
- Prepare a bowl for egg wash and another with half bread crumbs and half Panko. Add your seasonings to the bread crumb mixture and mix well.
- Run your chicken through the egg wash and then coat well with bread crumb mixture
- Place on the rack
- Bake at 350 for 30 minutes or so – depending on thickness. Check with a thermometer – 180 degrees
- Serve with your favorite tomato sauce and a bit of mozzarella on top

This is an easy recipe for Chicken Parmesan and much healthier. You eliminated all the oil and some cheese. I shall have to try it and see if it tastes just as good to me.

Chicken Parm is one of my favorite meals, but I don’t even remember the last time I made it. I like the way you’ve used both regular breadcrumbs and Panko–I bet that makes for a crisp but even coating. Thanks for this simplified version of a classic recipe.
