The Abundance of Hard Boiled Easter Eggs

Easter EggsGood morning everyone. First things first. Yes, I am back. I was in the hospital for 10 days following the death of my auntie. The stress of it all set off my Porphyria plus I had some “other” medical problems show up that needed to be dealt with. However, I am working very limited hours right now for the simple fact I am still very sick and trying to hang on as they work to fix the newest crop of medical problems that I am facing. Please continue to pray for me and my family.

Today’s Topic: Hubby and I sadly stayed home yesterday and didn’t go out to my daughter’s house for Easter. He is recovering from a nasty stomach virus and me…well, I am lucky if I can sit up for 15 minutes at a time without getting sick. Anyway, daughter called me late last night to let me know how Easter day went. She then went on to tell me that she currently has over 50 colored Easter Eggs sitting in her refrigerator and wanted to know how they can use them all up. So readers, we need your ideas on how to use up a slew of hard boiled Easter Eggs!!! (leave comment below)

    In addition to the ideas other have mentioned, add hard-boiled eggs to tuna salad, pasta salad, potato salad, eat them as snacks….

    Egg salad, deviled eggs, chop them up in salads, and I am sure there are other great ways to serve hard boiled eggs. Ie send a few to the neighbors

    As for the hard-boiled eggs, I’ve been trying to figure out what to do with twenty of them, and just two people in the house to eat them. I think we’ll just have hard-boiled eggs with breakfasts and egg salad sandwiches for lunch, and maybe diced egg added to salads. I’ve seen recipes for meatloaf with eggs embedded in the center, but I’ve never actually tried it.

    I shall be praying for you and your husband and am sorry you are suffering so much.
    If there is a shelter or food pantry nearby they could use the eggs. You could also bring them to the facility where your auntie stayed and make egg salad with them.

    Prayers for you…for your comfort, health, and strength….and prayers for God to guide the doctors to help you. I am so sorry you aren’t well. It is so hard. I hate to bring this up when you aren’t well at all…but please pray for my daughter, too. Easter weekend marked two years out of the hospital for her, and she was hoping to actually go out and celebrate this year. She had a fall and has hurt her ankles and groin…just pulled we hope but is having a lot of pain and wasn’t able to go out. She sends you best wishes as we all do. Please take care of yourself and know others are thinking about you and wishing you a speedy, easy recovery. As for the eggs, I only know of using them in recipes. Deb E had a great idea about trying to do an exchange with a neighbor….ham or maybe even candy or desserts…sweets and smiles are hopefully in your future soon. God bless you!

  7. Certainly, prayers all round for you Shelly. No fun to be hurtin’ on the holidays, that’s for sure. It would be great if you had some friends or neighbors that wanted to swap their over abundances of ham or other Easter goodies for some of your eggs so you don’t have more work to do. I always get great ideas from food magazines for that one, and I get several in the mail I haven’t read yet! Hard boiled eggs do seem to last a bit so you have some time at least! Get better soon.

    50 eggs! That is a lot! Yesterday Jon, my hubby, was making deviled eggs for me and he had about 14 eggs has was preparing. So instead of halving the eggs and preparing the yolks, he made egg salad – not thinking at all. He realized it when he was read to “fill” the eggs. HAHA We cracked up over that one. So then he had to make the deviled eggs so I have a big bowl of egg salad and a 1/2 plate of deviled eggs in the fridge today. Luckily that will not last around here. So egg salad is my recommendation. 🙂

    OMG, Shelly….(((((HUGS)))) What a time you are going through! I feel for you! My mom was in the hospital for all of March, and even though she’s home now, she’s far from well, and the stress is getting to me, too. I know what you’re going through. Hard boiled dyed eggs….donate them to a children’s/homeless women’s shelter? They can always use more food, and even though Easter is over, the kids would still have fun with them. As for not going to your daughter’s to Easter… there’s always next year. And Christmas. Well, at least you are on good terms with her, be grateful for that. My daughter was married on April 12, and neither my mom, my brother, nor I were invited, although her father (my ex-husband) and his girlfriend were there. Although she never hesitates to call here or email if she needs money! More stress…..sorry for whining, I just had to vent! Shelly, take care of yourself FIRST, everything else can wait. We love you!!!!!
