Living in California, you quickly find out that Mexican food has a lot of influence here. We have Mexican grocery stores and a restaurant on every corner, it seems. The food and culture is very much a part of California and there are certain favorite recipes that my family enjoys too. One of those is Cheese Enchilada’s. Here is an easy recipe that we make in our home that you can easily enjoy too. You can add Chicken, Ground Beef or Shredded Pork, if desired too
- 8 Corn Tortillas
- 29 oz Can Red Enchilada Sauce
- 1 Lb package of Shredded Mexican Cheese Blend
- Small Can Sliced Olives
- In a small skillet, place a cup or so of the enchilada sauce. Set the burner on simmer and warm the sauce. Have a 8×8 baking dish ready on the side.
- Run your tortilla into the warm sauce, making sure it is wet on both sides and allow it to warm slightly
- Place the tortilla in the baking dish, add a good size handful of the cheese blend and a few olives inside and roll the tortilla up- leaving it in the dish.
- Do the same with the other tortillas, adding sauce as needed.
- On the top of the tortillas, pour the additional sauce over the top of the enchiladas and then sprinkle additional cheese and olives, as desired.
- Bake at 350 for 30 minutes or until the cheese is melted and creamy.
- Serve with a side of Beans and Spanish rice

I”ve never made enchiladas – tacos, I have. I’d love to branch out and try this – you make it seem not too scary. and looks delish, too, I might add.
(Mexican Cheese Enchilada Recipe) This looks so good, I make something like this but it is really a chicken burrito recipe and you bake it in the oven. I will have to try this for our family.
Sounds delicious….we love beef & bean enchiladas…..really love making shredded chicken enchiladas with sour cream and Pace Picante Sauce! Yummy! I love new recipes!
I also add onions to my recipe and use black olives, chopped and scttered on top.

Cheese enchiladas is actually the first thing my boyfriend ever made for me almost two years ago. This is ones of those dishes we will usually make double of one freese one baking dish leaving it for a night when we do not have time to cook.
We usually make a ground beef and cheese mix adding chili powder, a can of tomato sauce, onions and cumin.

Onions and Sour cream are great add on’s. I love to make dishes that can be tweaked to everyone’s tastes. I do not care for onions much, so that is why I don’t add them in here, but hubby loves them. Plus this recipe is very mild so the kids will love it too!

This is an easy recipe to make and to change according to each person’s desires. I would probably add sauteed or caramelized onions and ground beef. My husband would prefer chicken.
Cheese. Enchiladas. You are speaking to me. This recipe looks delicious and easy to change to fit everyone’s liking. I love cheese and onion enchiladas. My husband likes beef, and my daughter chicken. 🙂 This would be great for us. I would add more cheese over the top for a final touch.

Looks yummy. I’d probably add chopped onions to the stuffing and put on sour cream and green onions before eating.
