Easy Chicken Tenders Recipe

I think we all get into a recipe rut. I know I tend to cook the same things over and over. So every once in a while, making new things can be exciting and fun. The other day they had chicken breasts on sale so I grabbed a package. I love chicken but like everyone else, looking for new ways to serve it is a challenge. I was in the mood for something quick and easy to prepare and decided to try making my own Chicken tenders. I have bought the pre-cut strips in the store before, but using the full breasts was so much cheaper! This would be awesome for Super Bowl!

The recipe is below but basically here is what you want to get set up.

1) Start with a simple egg wash – 2 beaten eggs in a flat pan with salt and pepper. In another flat pan, mix Panko and Italian Breadcrumbs. Add a bit of cayenne for flavor.  You can also try adding some Parmesan or a packet of Hidden Valley Ranch too
2) Rinse your chicken breasts and slice them into long strips; add a bit of salt and pepper
3) Heat your pan, add oil and start your dredging process. Egg wash, then dry, then into the hot oil.
4) Cook evenly on both sides and enjoy with your favorite dipping sauce

Cut the fat and calories by cooking in the oven on a rack at 350 maybe 20 minutes or so.

Easy to prepare chicken tenders. Crunchy and moist! These can be done in the oven to cut the fat.
Ingredients
  • 2 Chicken Breasts – skin removed and cleaned
  • 1 – 2 eggs – depending on the amount of chicken used (milk can be used instead too)
  • 1 cup Italian Bread Crumbs
  • 1 cup Panko
  • Salt
  • Pepper
  • Cayenne or Favorite Hot Sauce
  • Oil
Instructions
  1. Set up your dredging station with 1 pan holding beaten eggs and the other holding the 2 cups of bread crumbs.
  2. Season the eggs with salt and pepper. Add a few shots of hot sauce, if you are using that.
  3. Season the bread crumbs with cayenne, if you are using that spice. (Keep dry with dry and wet with wet.)
  4. Set up a pan with at least 1/2″ of oil in the bottom and heat until hot.
  5. Slice your chicken breasts and season with salt and pepper
  6. Dredge each piece of chicken in the egg and then in the bread crumbs, applying liberally.
  7. Fry your tenders until done – at least 4-5 minutes per side, depending on thickness

    This is another simple yet delicious recipe. I have cut chicken on my own and fried the pieces, but I have never added Ranch dressing to the mixture. I shall have to try that next time.

    I have all the ingredients to make this delicious Chicken Tenders. I am going to make these for the Super Bowl. I like to add the Hidden Valley Ranch to the bread crumbs!

  9. Honestly, my mouth was watering when I was reading this post! I’ve made a version of this by baking the strips, but I’ve never tried frying them. And I bet the combination of panko and Italian bread crumbs gives them a great texture. I am totally making this the next time chicken breasts are on sale! Thanks for the inspiration.
