My mom was a great cook not because she was my mom, but honestly I cannot remember her making anything that was not good. She loves to cook and bake. The one thing that she claimed she could not make well was pies but when it came to her desserts like cakes, cookies and bars, they were so good. This recipe is one right out of moms recipe box and it was one of my favorite recipes growing up. In the midwest, I think bars are a staple item at church bazaars and dinner tables every where. I love them and I hope that you enjoy this recipe as much as I do. Now that I am sharing it, I need to make some… MMmm
- 1c shortening
- 1 c sugar
- 2/3 c molasses
- 3 c flour
- 1 tsp baking soda
- 1 tsp cinn
- 1 tsp cloves
- 1 tsp nutmeg
- 1/2 tsp salt
- 1 c hot coffee
- 2 eggs
- frosting recipe:
- 2c powder sugar
- 1 tbsp butter
- 2 tbsp cream
- 2 tsp vanilla
- Cream together the first 3 ingredients. Then add the rest of the ingredients in order – saving the eggs for last. Blend well and bake in a 13 x 9 pan for 25 minutes at 350. Cool and frost with the frosting recipe.
My kind of bar –with coffee! We were so lucky to have my grandma (Mom’s mom) cook and bake up a storm at the holidays. She always had baked cookies when we came over too. She was a cook at the local grade school and I miss her and her cooking so much!

Although I love to bake, I’m usually too lazy to make cookies, with all that scooping or cutting or shaping of individual cookies. But cookie bars are another thing altogether! This recipe looks perfect for me–really simple to make but packing a flavor punch. Thanks for the recipe, and please thank your mom for me, too.
Looks good and I’d agree with adding a bit of ginger to the spices. I like ginger. I also like garlic, but wouldn’t put it in this…..
I think that this is a great recipe and what makes it different is the coffee. To add a kick to it I might add some ginger, cardamon and/or black pepper/
