Peach Mango Tilapia Fish Recipe

We have been trying to incorporate fish into our diet at least twice a week. We are pretty picky on the types of fish we will eat and when I cook using fish, I like the recipes to be quick and easy.

Last week I whipped up this super quick recipe using some Tilapia and just a handful of other ingredients.

This recipe is really easy to prepare and is great for a weeknight dinner when you don’t have a lot of time to spend in the kitchen. We like this served over some cooked riced and snow peas.
Ingredients
  • 4 to 6 Tilapia Fillets
  • 1 to 1 1/2 cups Peach Mango Salsa
  • 1/2 teaspoon Salt
  • 1/4 to 1/2 teaspoon Ground Black Pepper
  • 1/2 teaspoon Dried Basil
  • 2 to 4 cups Cooked Rice
  • 6 oz. Pkg. Frozen Snow Peas
Instructions
  1. Spray a skillet with some non-stick cooking spray. Place tilapia fillets in a hot skillet and simmer over medium heat for 3 minutes, turn over and simmer for another 3 minutes. Stir the salt, ground black pepper and dried basil into the peach mango salsa. Pour salsa mixture into the skillet and simmer with the tilapia over low heat for 5 minutes.
  2. Note: You can just heat up the salsa mixture in a microwave oven for 1 1/2 minutes on the high power setting if you don’t want it mixed with the fish.
  3. Serve the cooked tilapia and salsa mixture over the top of cooked rice (we prefer white rice with fish) and cooked snow peas. Serve immediately. Refrigerate any leftovers in an airtight container. Will keep for up to 3 days in the refrigerator.

  5. This does sound good, and budget friendly too. I’m not a big fan of overly fishy tasting fish, but tilapia is mild and these flavors sound delicious.

    I love mango’s in recipes and I like this fish recipe that includes fruit. I bet it tastes really good and it is very healthy. I will have to give this recipe a try!

  7. Another thing you can do with the peach mango salsa is simmer it on low for a few minutes and then spoon it over your favorite cooked pasta like a pasta sauce. Then serve it as a side dish or refrigerate it and serve as a cold pasta salad.

    Peaches and strawberries are my favorite bruits and I love trying recipes that incorporate one or both of them! This looks really good even though I am not a fish person. But I should think this would work on pork or chicken too. Thanks for the recipe!

    • It definitely does work on chicken! We like to use it as a chicken marinade when we do boneless, skinless chicken breasts. I have never tried it on pork but that’s a great idea!

    I like Tilapia since it is a clean tasting inexpensive fish and can be cooked in so many different ways. I have never tried it with a peach mango salsa, so this is a version I shall have to make soon. Thanks for the recipe.
