We have a pretty busy family. Even with just one child, there is always something going on and some days I really don’t have a lot of time to get a wholesome dinner on the table. One of the things that we do enjoy is a fabulous pork roast. The leftovers become a meal for the following day. This is a really great recipe for an on the go family for a fast lunch or dinner. If you make a roast in a slow cooker the day before, it whips up very quickly.
- 1 lb Leftover Cooked Pork Roast
- 1 cup or so Favorite BBQ Sauce
- Hamburger Buns or Hogie Rolls
- Cole Slaw – if desired
- Pickles – if desired
- Take 2 forks and shred the left over roast. Place it in a sauce pan and add your favorite BBQ sauce. We use Sweet Baby Rays. Warm the sauce and the meat through completely, stirring often so it does not scorch. Once it is warm, add the meat to your bread, top with coleslaw and pickles, if desired and serve.

This sounds wonderful. I would make a pork roast just to have this. Perfect fall fun food! Must have the coleslaw, too. Yum.

If you have your favorite BBQ sauce on hand or like to make it this is such an easy yet delicious recipe to make. Sometimes I use chicken instead of pork and lettuce instead of coleslaw.
This one of our families favorite meal. I crock pot the pork and use the BBQ sauce but I am the only one who likes the coleslaw on top. The cool tangy slaw with the warm tangy pork. So good.
I really like this recipe to make BBQ pulled pork sandwiches. My family loves pulled pork and your recipe is easy to make. I will have to make these soon.
Aren’t BBQ pulled sandwiches wonderful?! We love having pulled pork and pulled chicken barbecue sandwiches. My daughter likes to make them in the slow cooker and make her own sauce. We will have to try this since it would be so easy to do. A warm, quick, filling meal! Great for a weeknight or anytime.
