Easy Homemade Potato Pancakes Recipe

I love pancakes and from time to time I enjoy a good old fashioned potato pancake too! With that said, I hate having to cook up potatoes or use leftovers from the night before…so I use this “cheater” recipe when it comes to making homemade potato pancakes. To make them, you will have to utilize your blender.

Homemade Potato Pancakes Recipe

1/4 cup fresh cold milk
2 large eggs
3 cups raw potatoes, diced
1/2 small onion, finely chopped
3 1/2 tbsp. all purpose flour
1 tsp. salt
1/4 tsp. baking powder

Place all of the above ingredients into a large blender container; cover. Process on medium speed just until the potatoes go through the blades. Do not over-process or the potatoes will liquefy.

Turn on your griddle and get it nice & hot. Pour batter onto the griddle plate, close and simmer until both sides are golden brown and the centers are done. You can also fry them up in a skillet on your stovetop too!

    I would not call this a cheater recipe. It is just a simpler way to make potato pancakes. My only concern would be if there is too much water in the raw potatoes, but I guess I’ll find out when I try them Thanks for the recipe.
