My mother, daughter and husband are all big coffee drinkers, and during the holiday season, I love to stuff their holiday stockings full of gourmet holiday flavored coffees! A great recipe to try for a decadent dessert coffee? Marshmallow Candy Bar! Start by putting one Tbsp. of mini marshmallows and one snack sized chocolate/caramel-type candy bar in the bottom of a mug. Then, pour your Eight O’Clock Coffee over the candies. If you’re using a Keurig® brewer, simply brew the coffee into the candy-filled mug. Stir until the candy melts, and you’re done! The great folks over at Eight O’Clock sent me a bag of their new Chocolate Mint Ground Coffee to try out for all of you along with some of their new K-cups. I measured out the amount of Chocolate Mint Coffee that I needed to make a full pot of “joe” and got busy brewing. I decided to serve the coffee right alongside some freshly baked pumpkin pie.

Eight O’ Clock Coffee New Limited Edition Chocolate Mint CoffeeI served the pie and coffee to 6 guests and within a few minutes, everyone was raving over this Chocolate Mint Coffee! (no one was raving about my pumpkin pie, geesh!). Some of my guests drank their coffee black, others added sugar and/or cream. Myself personally, I just added cream! The coffee has a nice smooth taste, nothing bitter about this medium roast coffee at all. You could taste the chocolate & mint flavors and they were beautifully blended together. Have you ever had a chocolate grasshopper mint pie? a chocolate peppermint candy? If so, this coffee tastes just like them and it is super…and I mean SUPER….delicious! Yummy!
