I love doing book reviews for all of you especially when they are reviews on cookbooks or craft books! Today’s book review is on the newly released paperback cookbook called: “The Big Book of Babycakes Cupcake Maker Recipes” by Kathy Moore & Roxanne Wyss.

The ISBN: 978-0-7788-0417-8 with the suggested cover price of $24.95. There are 227 pages with 32 color photos and step-by-step directions inside.

My Thoughts: As you all know, I am getting ready to move into our new house so all of my baking supplies and most of my kitchen are packed for the move. I sat down one evening last week and went through this book, cover to cover and was super impressed with what I saw. Everything in this book is laid out nicely and it flows from start to finish. Everyone can use this cookbook from the beginner baker to the experienced expert!

The photography within this book is just beautiful and it makes your mouth water and gives you a great incentive to get busy trying out all of the techniques shown in the book along with the yummy recipes. I love the step-by-step instructions as I am not an expert baker but do love to bake as often as I can! I love this book and I can’t wait to get moved and unpacked so I can begin my fall baking! I will be trying out several of the recipes featured in the book!

Rootbeer Float Cupcakes Recipe

Rootbeer Float Cupcakes Recipe

To make each cupcake look like a root beer float, mound fluffy puffs of Vanilla Buttercream Frosting (page 105), made with gluten-free confectioners’ (icing) sugar, on top. Cut a bendy straw in half (discarding the bottom half) and insert it into the cupcake.

Makes 17 to 19 cupcakes

Paper liners (optional)
1 cup gluten-free chocolate cake mix 250 mL
2 large eggs, at room temperature 2
1/2 cup root beer, at room temperature 125 mL
1/2 cup butter, softened 125 mL

1. In a medium bowl, using an electric mixer on low speed, beat cake mix, eggs, root beer and butter for 30 seconds or until moistened. Beat on medium speed for 2 minutes.
2. If desired, place paper liners in wells. Fill each well with about 11?2 tbsp (22 mL) batter. Bake for 6 to 8 minutes or until a tester inserted in the center of a cupcake comes out clean. Transfer cupcakes to a wire rack to cool. Repeat with the remaining batter.
